築50年のレストランを、「サステナブル」をテーマにリノベーションしました。元の店舗の骨格を残しつつ、白と木を貴重にした空間デザインを施し、地域の特産品であるりんごやお米をイメージしたオリジナルパターンをインテリアに活用しました。元のパターンデザインは、フィンランドから世界に向けて活躍する山口県出身のデザイナー・大田舞さんの協力を得ています。また、徳佐の自然を絵画に見立てて楽しめる大きな窓のあるレストラン空間や、お友達とゆっくりカフェのできるソファ空間なども併設しました。
なお、ほとんど捨てられていた牛骨のフードロスをなくそうと、牛骨を使ったラーメンを開発するなど、様々な角度から「サステナブルライフ」を提案していきたいと考えています。

A 50-year-old restaurant was renovated under the theme of "sustainable. While retaining the framework of the original restaurant, we designed the space with white and wood as the precious materials, and utilized original patterns inspired by apples and rice, local specialties, for the interior design. The original pattern design was created with the help of Mai Ota, a designer from Yamaguchi Prefecture who is active from Finland to the world.The space also includes a restaurant with a large window where you can enjoy the nature of Tokusa as if it were a painting, and a sofa space where you can relax with friends in a café.
In addition, we would like to propose "sustainable life" from various angles, such as developing ramen noodles using beef bones in an effort to eliminate food loss from beef bones, which are mostly thrown away.
